For over 35 years, Santo has been sharing his passion for Italian cuisine, crafting authentic dishes that transport diners straight to the heart of Sicily. 

Born on the small island of Lipari, he immigrated to Australia in 1968 and grew up in Western Sydney, where he honed his skills in the traditional Italian community of Drummoyne. From his early days making pizzas at 17 to running Sydney’s beloved “Pasta Bella” in Glebe for 13 years, Santo’s journey has been defined by his dedication to authentic Italian food.

After relocating to Kandos in 2021, Santo quickly made a name for himself with his signature wood-fired pizzas, prepared in an oven weighing over a tonne. But his passion for cooking goes beyond just pizza. Opening Santo’s Pizza & Pasta allowed him to expand his culinary offerings, bringing a true taste of Italy to locals and visitors alike.

For locals and tourists alike, the restaurant is more than just a place to eat - it’s an experience. Santo takes great pride in introducing patrons to the rich and comforting flavours of Italian cuisine, offering dishes beyond the typical pub fare available in the area. Whether it’s the creamy Fettuccine Boscaiola, a perfectly grilled Chicken Avocado, or his famous Tiramisu, every dish is made with care and tradition.
